Greek salad

Ingredients:

  1. Cucumber
  2. Tomatoes
  3. Bell pepper
  4. Kalamata olives
  5. Red onion

Toppings:

  1. Olive oil
  2. Balsamic vinegar
  3. Lemon juice
  4. Feta cheese
  5. Dill (optional)
  6. Mint (optional)

Extensions:

To make the salad a bit more filling—a whole meal—add chickpeas, couscous, or both.

  1. Roasted chickpeas
  2. Pearl couscous

I like to cook the couscous in a vegetable broth.

Directions:

  1. Chop ingredients into roughly even pieces.
  2. Mix the chopped pieces together.
  3. Dress with olive oil, balsamic, lemon juice, feta, and herbs to taste.
